Blueberry Lemon Cupcakes



Joanne's Blueberry Lemon Cupcakes are a tasty treat that have both the sour and sweet flavors of lemons and blueberries. Perfect for any event!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 1/2 cups fresh blueberries

Instructions:

Start by heating the oven to 350F 175C

You can line a muffin tin with cupcake liners

Mix the flour, baking powder, baking soda, and salt in a bowl with a whisk

Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy

Add the eggs one at a time and beat well

Then add the sour cream, milk, vanilla extract, lemon juice, and lemon zest and mix well

Add the dry ingredients to the wet ones one at a time and mix just until everything is combined

The fresh blueberries should be added slowly

Fill each cupcake liner about two thirds of the way to the top with batter

Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

Take the cupcakes out of the oven and let them cool in the pan for a few minutes before moving them to a wire rack to cool all the way down

After the cupcakes have cooled, you can frost them and decorate them however you like
